Simple Healthier Banana Cake
A delicious and healthier version of a banana bread to be enjoyed by the whole family. Less sugar and less dairy. The natural sweetness comes from the bananas as well as using our blend as a topper to get those extra fruits in :)
Ingredients:
1 1/2 cups, mashed bananas (the more ripe the banana, the sweeter)
2 eggs
1 tablespoon vanilla extract
2 tablespoon brown sugar or coconut sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all purpose flour (can use whole wheat)
2 tablespoons unsalted butter, melted or coconut oil (for dairy free option)
Pinch of salt
Method:
- Preheat oven to 180C. Line a loaf or cake pan with parchment paper to make sure the banana bread doesn’t stick.
- Mash bananas in a mixing bowl until smooth. It’s ok if there are still some lumps. Add the eggs, sugar, vanilla, and cinnamon. Mix until well combined.
- Then stir in the flour, baking soda, baking powder, butter and salt into banana mixture. Stir to combine.
- Bake for 30-40 minutes or until cake tester or toothpick inserted into the centre comes out clean.
- Allow to cool in the pan for 10 minutes before transferring onto a cooling rack.
- Cut a slice and enjoy with our banana date kiwi blend as a topper!
